Cheesy Tomato-Beef Pie

General description: 

Spoil someone you love with this amazing combination of flavours. This pie has everything a great burger has but it’s all beautifully layered on a crust, topped up with a crispy layer of cheese. It is a perfect meal for the whole family.

Ingredients

 

– Pie Crust (you can make your own following our recipe or you can use a frozen pie shell)
– Tomatoes (1-2 large)
– 1 cup shredded medium cheddar cheese
– 1 cup shredded mozzarella cheese ( a lot of the time I just use 2 cups shredded cheese mixes that do not contain mozzarella)
– 1 cup mayo
– Salt and pepper
– 1 teaspoon Spice blend (parsley & basil or your favorite blend)

Directions

– If you followed our shortcrust pastry recipe, it is already baked. If you are using a frozen pie shell bake pie crust until slightly brown (around 8-10 minutes) at 375

– Reduce oven temperature to 350

– In the meantime, slice tomatoes 

– Place tomatoes on paper towel to drain, pat gently to remove excess liquid

– Cut onions 

– Mix cheese(s) and mayo together

– Cook onions and meat until brown

– Put the meat and onions into the (slightly cooled) pie crust

– Place a layer of seasoned tomatoes (salt and pepper)

– Put about 3 dollops of cheese/mayo mixture on top and spread out

– Add another layer of tomatoes and top with cheese/mayo mixture

– On the top layer, sprinkle a mixture of the spice blend

– Bake for 30′ at 350 °F

– Let cool before serving

– Enjoy
